Burning Kiln Winery has adopted the ancient appassimento method in winemaking which is the technique of drying fully ripe grapes on mats or slated crates for a period of time before fermentation. With the land formerly being used to farm tobacco, we have chosen to use the tobacco drying kilns to dry our grapes. This method helps to accentuate the sugars, boost the acids and balance the tannins allowing for a deeper coloured and fuller flavoured wine to be produced.
Burning Kiln Winery is an innovator in both the area and the wine industry with this new drying method for the grapes. The tobacco kilns provide the perfect environment and airflow while preventing mold and rot on the grapes. We are constantly exploring new ways to make exceptional quality wine for you to enjoy.
